COOK: Burger and Sandwich Pockets (Great to make ahead and freeze!)

These burger or sandwich pockets, are great to make and then freeze, and with summer break coming up it's a great time to stock your freezer with quick and easy food that the kiddos can grab and heat up on their own.  

These are also great for appetizers, just make each pocket smaller so it can be eaten in a bite or two!

When I make these I wrap each one individually in foil, then label them and write down the time to microwave them on the foil, then put them all together in a big plastic bag in the freezer.  

I don't have an air fryer (yet!) but I think these would probably re-heat wonderfully in one, if anyone tries it please let me know so I can add the instruction to the post, and maybe send you a little gift! 

I use my pizza dough recipe for these, but you can use refrigerated pizza dough from the store to make it easier.

I'm going to give you three filling recipes that I like, but you can mix things up with different meats, chesses, sauces, etc.  One tip, you don't want your filling to be too watery as it can make in inside a bit soggy, so if you are using a lot of vegetables make sure to drain the liquid before adding any sauces or final seasonings.

I'm hoping to test some sweet fillings soon and will let you know how they turn out.

All recipes, including the pizza dough, can be cut in half.

Burger and Sandwich Pockets

Makes 12 or more depending on size

For all pocket recipes you'll need:

1 batch of my easy pizza dough (plan ahead as it takes at least 1 hour to rise) OR refrigerated pizza dough, enough for two pizzas (about 14-16 Ounces)

Egg Wash Mixture: 2-3 Egg Yolks with 2-3 Tablespoons Cold Water whisked together

Bacon Cheeseburger:

Ingredients:

2 Pounds Ground Beef
12 Slices Uncooked Bacon
2 teaspoon Garlic Powder
2 teaspoon Onion Powder
1 teaspoon Black Pepper
1 teaspoon Salt
4 teaspoons Worcestershire 
16 Ounces Cheddar Cheese (Shredded)
4 Tablespoons Dijon Mustard (Or your favorite mustard)

Preparation:

Chop bacon into small pieces, mix together uncooked meats, garlic, onion, pepper, salt, and worcestershire sauce, cook until meat is cooked through, remove from heat and let cool to room temperature. 

Mix in shredded cheese, mustard, and season to taste.

I like to serve these with dipping cups of ketchup, (If you haven't tried the Heinz Chipotle, Jalapeno, or Habanero flavored ketchups you should!) mustard, or barbecue sauce.  

Buffalo Chicken:

Ingredients:

2 Pounds Chicken Breast (Cooked and Shredded)
1 Cup Frank's Red Hot Buffalo Sandwich Sauce (or other thick hot sauce)
16 Ounces Cheddar Cheese (Shredded) 
8 Ounces Crumbled Blue Cheese
4-5 Stalks Celery (Finely Chopped)

Preparation:

Once shredded chicken has cooled to room temperature mix all ingredients together, add additional seasonings if needed.

Serve with Ranch or Blue Cheese Dip and Carrot Sticks

Beef French Dip:

Ingredients:

16 Ounces Thinly Sliced Ribeye, or Shaved Roast Beef
2 teaspoon Garlic Powder
1 teaspoon Black Pepper
1 teaspoon Salt
1 Medium Yellow Onion (Sliced)
2 Green Peppers (Sliced)
12 Ounces Cheddar (Shredded)
12 Ounces Monterey Jack (Shredded)

Preparation:

Season meat and set aside.  

In a large pan sauté onions and peppers until soft and slightly browned, remove from pan into a large bowl,  Add meat to pan and cook just until it's cooked through, remove and give it a quick rough chop so meat is in bite size pieces,  add to onions and peppers and let cool until room temperature.

Mix in cheeses, and add any additional spices if needed.

Serve with or horseradish sauce or beef au jus (I always have a bottle of Johnny's Au Jus in the fridge and an extra in the pantry!).

For all pockets:

Preheat oven to 400 degrees, prepare baking sheets with silicone mats or parchment paper.  (You can also use a cast iron pan like pictured above, however this causes small holes where they touch and isn't good if you'll be freezing them.)

Divide pizza dough into 12 or more balls depending on the size you want the pockets to be.  (12 will make large pockets, good for a filling dinner with a salad, if you are doing appetizers I'd cut it into 36 balls.  I usually do a few big for dinner that night, then some smaller to freeze for lunches.  Keep dough balls covered with plastic wrap so they don't dry out.  

Taking one ball at a time roll it out until it is a thin round circle, add filling of your choice to the center covering about 2/3 of the dough (I use my cookie scoops for the filling, this set  has three sizes and works great for all sizes of pockets.)  

After filling pull up each side of pocket and have them meet in the center above the filling and pinch so that it is sealed with no holes, flip over so seam is down on prepared baking sheet, leave at least an inch between each pocket. (I promise I'll add pictures or a video of this soon!) 

Using a pastry brush gently brush egg wash onto the top of each pocket, I like to sprinkle them with Everything Bagel Seasoning, Sesame Seeds, or Dried Minced Garlic.

Bake for about 20 minutes until tops are golden brown.  (If you are making appetizer sized pockets check them at about 12 minutes, tops should be golden and bottom slightly browned around the edges.)

Remove from oven and serve with dipping sauces.  If freezing cool completely on a cooling rack before wrapping in foil to freeze.

Reheating Instructions: From frozen, microwave 2 minutes, then wrap in a moist paper towel and microwave another 2 minutes.  When I pack these in lunches I put them in the fridge the night before, then you can just wrap it in a moist paper towel and microwave about two minutes.

20 Fun Activities To Keep Kids Busy At Home

We got the call today that the kid's school will be closed for at least the next three weeks due to the COVID-19 (Coronavirus).  I applaud the school for making this tough choice, but then I realized I need to keep kids entertained for THREE WEEKS!

Our local Library, pool, museums, etc are all closed to, it's hard to keep kids busy, especially when you can't leave the house!  So, my son and I sat down and made a list of some fun things you can do, using things you probably have around the house, to keep the kiddos busy, and happy! 

1. Nerf Wars:  My kids can spend hours hiding and getting each other with their Nerf guns, we do make the rule that you can't shoot higher than the chest.

2. Target Practice: Draw a target on a window or sliding glass door with a dry erase marker and see who can get the most bullseyes!

3. Lego Building: This is something that my kids can do for hours!  To make it more exciting you can see who can build the weirdest car, or who can make the tallest building.

4. Make-Your-Own-Board-Game: Cut a piece of cardboard off of one of the Amazon boxes you probably have in your garage, get out the markers and construction paper, and create your own board game. 

5. Toilet Paper Roll Crafts: Since we know everyone stocked up on toilet paper, save the empty rolls and paint them and use colored paper to create fun decorations for the house.  (You can use wine corks too!)


6. Paper Roll Races: Tape empty toilet paper and paper towel rolls on the wall and see who can make the most "baskets" in a set time using bouncy balls or pom-poms.  Or see who can make the longest and track and get the ball to go down without being stuck.

7. Creative Recipes: Using a list of set ingredients have everyone come up with a fun recipe, then vote on the one that sounds the yummiest and cook it together.

8.  Write "Old Fashioned" Letters:  Older relatives love to get fun snail-mail, write them a letter, or draw a picture and send it to them, it will brighten their day and they might send something fun back!

9. Bake: It's always fun to make your own cookies or bread, click here for our favorite cookie recipes, or click on the "Baking" Label in the right hand column.  

10. Write a Silly Story: Take turns writing a sentence until you have a silly story, for extra fun act it out and record it to share with friends and family.

11. Re-Purpose: Go through the recycling bin and see who can create something new and useful from the recycling.

12. Bubbles: Fill the sink with water and dish soap, have the kiddos wash their plastic toys, while they play with the bubbles!

13. Egg Decorations: Cut egg shapes out of cardboard or card stock, then decorate them with markers, colored pencils, or crayons and then staple them all to a long string and hang the garland up.

14. Ad Libs: You can go to Mad Takes and download a bunch of "Mad-Lib" type games.

15. Build a Fort: Get out all of the blankets and pillows and build a huge family fort, then make some popcorn and sit in the fort telling stories, or asking each other silly questions!


16. Scavenger Hunt: Put notes around the house with riddles telling them where to go next, I think it's fun to do after they are asleep, then when they finally get to the end in the kitchen I have their favorite breakfast ready.

17. Temporary Tattoos: Using washable markers give each other silly tattoos, this is extra fun if you put everyone's name in a hat and pick, and then also have body parts written down (arm, leg, foot, hand) and then you give that person a tattoo on the body part you picked!

18.  Laundry Race: See who can put their folded laundry away, properly, the fastest!  (This one is more fun for the parents!) 

19. Dance Party: Turn on your favorite tunes and dance around like no one is looking!  Or have a dance off, who has the best moves?

20. Keep A Journal: Set aside 20 minutes every day for everyone to write a journal entry, if the kids are scared they can write about it, if they are bored they can use the time to make a list of what they want to do, if they are frustrated they have to spend 24/7 with their annoying little brother they can use it as a outlet for that.

COOK: Kid Approved Pizzaritos

My kiddos have never been very picky, but there are some foods I know that will always eat without any complaints, they are also some of the easier recipes and the first things I've taught them how to make.   As soon as we gave Berea her cookbook she asked KC to put this recipe in it!

One of my favorite things about this recipe is it's very easy to "hide" veggies in, for those people that have a hard time getting their kids (or husband!) to eat their veggies.  If I don't use homemade I get the Prego Veggie Smart Pizza Sauce it has 30% of daily veggies!  You can also dice up green peppers, mushrooms, olives, and add then when you add the pepperoni if you want.


Kid Approved Pizzaritos


Ingredients:

1 Pound Ground Beef
4 Ounces Sliced Pepperoni (cut into fourths)
14 Ounces Pizza Sauce 
8 Ounces Mozzarella (grated)
Burrito Size Flour Tortillas

Preparation:

Cook ground beef until brown, then drain.  Add cut pepperoni, and sauce, mix well.  Let simmer 10 minutes, stirring as needed. 

Serve burrito style, tortilla, cheese, meat mixture, then roll!

COOK: Milk Chocolate Java Cookies

I'm back!  I'm sorry I've been gone so long, we have a lot of birthdays in March and things got a little crazy around here!

The bonus is I worked on quite a few new recipes so now I have a lot to share with you over the next few weeks.

The posts might be a little light on photos, but I'll add more as I make the recipes again, (and again, they were all proclaimed keepers by the family!)



This recipe is actually Dustin's creation, we wanted to make cookies but couldn't find one that we had all ingredients on hand for so he came up with some substitutions and a brand new recipe was born!



Milk Chocolate Java Cookies


Ingredients:

1/2 Cup White Sugar
1/2 Cup Light Brown Sugar (packed)
1/2 Cup Salted Butter (softened)
1 Large Egg
1 teaspoon Vanilla Extract
1/4 Strong Coffee (cooled)
1 Package Single Serve Instant Coffee
1/2 teaspoon Salt
1 teaspoon Baking Powder
1 3/4 Cup Flour
1 1/4 Cups Milk Chocolate Chips

Preparation:

Preheat oven to 350 degrees, prepare 2 cookie sheets by spraying, greasing, lining with parchment paper, or silicone baking mat.

(You can use a mixer for this recipe, or mix by hand, this dough gets rather stiff.)

In a large bowl cream together your sugars and butter until the mixture is light and fluffy.  Add in the egg until just combined.  Then add in your cooled coffee and vanilla.  Mix together.

Now add in your instant coffee, salt, and baking powder.

Slowly add in your flour, about 1/2 cup at a time, mixing after each addition.

Now, add in your chocolate chips and mix.


Using a cookie scoop, or a small spoon, drop spoonfuls of dough onto your prepared cookie sheets, about 12-14 per sheet.

Bake at 350 degrees for 10-12 minutes.

Let cool about 2 minutes before moving to a baking rack to finish cooling.

These cookies can be stored, up to a week, in a sealed baggie or plastic storage container for up to a week.  (If they last that long!)

They are delicious warmed up and enjoyed with a cup of coffee, Dustin says they are wonderful with a cold glass of milk!

FUN: Toilet Paper Roll Crafts


I love decorating for every holiday or season.  I think the DIY decorations are the best, I always make the kiddos put their name and the year on them, because I know I won't remember years from now, but I'll still use the decorations.

One of our favorites is decorating toilet paper rolls and wine corks.


We made bunnies for Easter, snowmen, reindeer, and trees for Christmas, jack o'lanterns and spiders for Halloween, and love bugs for Valentine's Day.

If you use toilet paper, just save the roll when you change it.  The same with wine corks.  So easy, right??!!??

We usually paint the roll/cork, then decorate.  We have used paint, Sharpie pens, felt, pom-poms, pipe cleaners, ribbon....

It's so easy, and super cute!

If you are using wine corks and want to cut them just put them in a pot of water, bring to a boil, remove corks with a hot pad and cut with a bread knife, (or any serrated knife), easy-peasy!

You can find a lot of ideas on Pinterest, I show the kiddos but tell them I want them to use their imagination and make it their own.  I love knowing that years from know I'll have these decorations and can show my grandkiddos what their parents made, and I hope my kiddos will make decorations with their kids.

I save all of the decorations in shoe boxes (aside from Christmas, then we have multiple plastic totes), the kiddos love getting the decorations out and seeing what they did "when they were young" in Little Miss B's words.
