COOK: Milk Chocolate Java Cookies

I'm back!  I'm sorry I've been gone so long, we have a lot of birthdays in March and things got a little crazy around here!

The bonus is I worked on quite a few new recipes so now I have a lot to share with you over the next few weeks.

The posts might be a little light on photos, but I'll add more as I make the recipes again, (and again, they were all proclaimed keepers by the family!)



This recipe is actually Dustin's creation, we wanted to make cookies but couldn't find one that we had all ingredients on hand for so he came up with some substitutions and a brand new recipe was born!



Milk Chocolate Java Cookies


Ingredients:

1/2 Cup White Sugar
1/2 Cup Light Brown Sugar (packed)
1/2 Cup Salted Butter (softened)
1 Large Egg
1 teaspoon Vanilla Extract
1/4 Strong Coffee (cooled)
1 Package Single Serve Instant Coffee
1/2 teaspoon Salt
1 teaspoon Baking Powder
1 3/4 Cup Flour
1 1/4 Cups Milk Chocolate Chips

Preparation:

Preheat oven to 350 degrees, prepare 2 cookie sheets by spraying, greasing, lining with parchment paper, or silicone baking mat.

(You can use a mixer for this recipe, or mix by hand, this dough gets rather stiff.)

In a large bowl cream together your sugars and butter until the mixture is light and fluffy.  Add in the egg until just combined.  Then add in your cooled coffee and vanilla.  Mix together.

Now add in your instant coffee, salt, and baking powder.

Slowly add in your flour, about 1/2 cup at a time, mixing after each addition.

Now, add in your chocolate chips and mix.


Using a cookie scoop, or a small spoon, drop spoonfuls of dough onto your prepared cookie sheets, about 12-14 per sheet.

Bake at 350 degrees for 10-12 minutes.

Let cool about 2 minutes before moving to a baking rack to finish cooling.

These cookies can be stored, up to a week, in a sealed baggie or plastic storage container for up to a week.  (If they last that long!)

They are delicious warmed up and enjoyed with a cup of coffee, Dustin says they are wonderful with a cold glass of milk!
