COOK: Simple Tomato Chicken Pasta


This has been my favorite "I don't know what to cook" dinner for about 10 years.  I have made it a ton of times and it has never been the same twice.  Plus, you can get it on the table in about 15 minutes!

Simple Tomato Chicken Pasta


Ingredients:

Basics:
1 Pound Chicken Breast (cubed)
1 15 Ounce Can of Petite Diced Tomatoes (or regular tomatoes chopped)
1 12-16 Ounce Box of Pasta
Salt, Pepper, Garlic Powder, Onion Powder to Taste

Other things I like to add:

Chopped Onion
Minced Garlic
Chopped Basil
Balsamic Vinegar (this is always a huge hit with KC and the kiddos!)
Crushed Red Pepper
Green Onions (as a garnish after cooking)
Parmesan Cheese (grated)

Preparation:

I start by cooking the chicken, then dicing it (if I didn't already).  Add in any seasonings, and any additions you have.  Then add in your tomatoes and let simmer about 10 minutes while your pasta cooks.

You can mix it together before serving, or serve your tomato chicken sauce over the pasta.

The possibilities are endless, it really depends on what I have on hand and how I'm feeling.  It's also great as leftovers, hot or cold!
